Because we are gluttons for punishment, we decided to add a second caterer with just two weeks to go. Apparently we were too content with having everything taken care of in advance and needed to shake things up a bit!
We already have cake and champagne service from Mandalay Bay, but we decided we wanted to add a couple of savory hors d'ourves so our guests won't go into sugar shock before night is over.
We ordered five cold appetizers from
Creative Catering, Las Vegas, as well as plastic and paper. It had to be cold apps, as Mandalay Bay doesn't actually let outside vendors in the suite anymore, so we are going to get it to-go and serve it buffet-style ourselves.

- Coconut Curry Mini Spring Roll (vegetarian)
- Antipasto Skewers
- Chicken Caesar Pinwheels
- Vegetable Crudite Cup (vegetarian)
Lauren did a great job acquiescing to all our crazy requests and putting this together on such short notice, and with so many restrictions.
